丙谷二肽(L-alanyl-L-glutamine,Ala-Gln)为白色结晶性粉末,无臭无味,分子式为C8H15N3O4,相对分子质量为217.22,结构如图1所示。Ala-Gln的溶解度可达586 g/L(20℃),比游离L-Gln高20倍,略溶于冰乙酸,几乎不溶于甲醇。游离L-Gln在酸性或高温条件下极易分解并生成有毒的焦谷氨酸和氨,而Ala-Gln具有良好的热稳定性,可在120℃下不分解,Ala-Gln可在体内快速分解生成游离L-Gln,提高体内游离L-Gln含量,无副作用产生。目前认为Ala-Gln是L-Gln的最佳替代品,可克服L-Gln不易储存、水溶性差、高温易产生有毒物质等缺点,作为一种新颖的营养补充剂,已应用于临床治疗。
